I think the name is of Arab origin.
The name of "Shawarma or Shawirma" comes from a turkish name "Chevirme".

The verb "chevirmek" means -to turn and the the adjectif "chevirme" means -smthng be turned.
This adjectif is used in turkish for the meat which baked on the fire by turning.
