You are in luck. I am posting some of my favourite recipies, plus a basic one for the starter. Basic Chocolate Fondue Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Chocolate Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 Cup Cream 1 Pound Milk Chocolate (Bar Or Bulk) 3 Tablespoons Kirsch, Cointreau, Or Brandy -- optional Warm cream in saucepan over low heat. Stirring constantly, add the chocolate, broken into small pieces. Continue stirring until chocolate is melted and well blended. Add liquor or brandy, if desired. Serve in fondue dish over candle or very low heat. Offer a choice or fruit to dunk. PEANUT BUTTER AND CHOCOLATE FONDUE Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Chocolate Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 oz Semisweet chocolate pieces 1/2 c Peanut butter 8 oz Pineapple chunks, drained 2 lg Bananas cut into 1" pieces Lemon juice Seedless grapes Cubed pound cake or angel -food cake Marshmellows Strawberries Apple slices Melt chocolate and stir in peanut butter. Mix till smooth. Heat till hot and put in a serving bowl. Pat fruit dry. Brush apple and banana with lemon juice. Arrange a selection of fruit and cake on platter around fondue. Dip into fondue to eat. Makes 1 1/3 cups of fondue mix. CHOCOLATE FONDUE A LA CHALET SUISSE Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Desserts Chocolate Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 3-oz bars Toblerone 1/2 c Light or heavy cream 2 tb Kirsch, brandy or Cointreau Break the Toblerone into separate triangular pieces. Combine all the ingredients in a saucepan or small chafing dish. Stir over *low* heat until the chocolate is melted and smooth. Serve in a chafing dish over low heat. For dunkables, serve each person a plate with one, or a combination, of the following: Angelfood cake, or ladyfingers, cut in chunks Orange or tangerine slides, strawberries, bananas Profiteroles of puff pastry White Chocolate Fondue Recipe By : <robert.foster@nashville.com> Serving Size : 1 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 oz. white chocolate 1 oz. Kirsche's cherry brandy 8 oz. heavy whipping cream Preparation : Combine chocolate and cream in a double boiler. Stir until the chocolate melts completely. The mixture should be creamy; do not overcook. Mix thoroughly. Put mixture in a fondue pot and keep a low flame on to keep it warm. Serve with any type of fruit or firm cake. Strawberries, apples, and bananas are especially good with it. Sherry-Chocolate Fondue Recipe By : Mrs. Thomas J. Blair, III Serving Size : 1 Preparation Time :0:00 Categories : Desserts To Post Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 1 Oz. Sq. Unsweetened Chocolate -- cut into pieces 1 C Granulated Sugar 3/4 C Sherry -- * see note 1 Tsp Vanilla Extract 1/8 Tsp Salt Blend the chocolate pieces, sugar, sherry, vanilla, and salt until smooth, using an electric blender at high speed. Pour into fondue pot; heat and keep warm over low leat. Sauce thickens as it stands. Makes 1½ cups. Use cut-up fresh fruit for dipping: pineapple, pears, strawberries, etc., or serve it with chunks of pound cake, doughnuts, or marshmallows. TRIPLE CHOCOLATE FONDUE - JEANNE ELLEDGE Recipe By : Serving Size : 20 Preparation Time :0:00 Categories : Desserts Chocolate Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lg BAR SEMI-SWEET CHOCOLATE 1 pk SEMI-SWEET CHOCOLATE CHIPS OR CHUNKS 1/4 c TRIPLE SEC 3/4 c HEAVY CREAM MELT IN DOUBLE BOILER, MICROWAVE, OR OVER VERY LOW HEAT STIRRING FREQUENTLY TO PREVENT SCORCHING. SHOULD BE VERY CREAMY BUT NOT SOUPY. MAY DIP ALL TYPES OF FRUIT, POUND CAKE, OR WHATEVER YOU DESIRE. RECOMMEND APPLE, BANANA, STRAWBERRIES, PINEAPPLE, KIWI, ORANGES, ETC. POUND CAKE, LADY FINGERS, ARE GREAT. Spiced Chocolate Fondue Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 oz Semisweet chocolate chips (340g) 1/2 c Light corn syrup (120mL treacle) 1/4 c Milk (60mL) 2 tb Coffee flavored liqueur (30mL) or to taste 1/8 t Cinnamon (about 300mg) or to taste Place chocolate chips and corn syrup in 4 cup measure. Microwave uncovered on 50% until mixture can be stirred smooth. 1 1/2 - 2 mins. Stir in milk, liqueur and cinnamon. Microwave uncovered on medium setting, stirring every minute, until warm. 2 - 3 minutes. Pour into fondue pot or chafing dish to keep warm. If mixture becomes too thick, stir in small amount of milk. My fave is the Chalet Swiss. I hope you enjoy them. Ha! I hope you can get Toblerone in Russia!!! If not, I will bring you some when I come in May ![]() Amy |

Thanks for all this wonderful stuff - I'll see if it can be put to use!! I think pineapple is the nicest thing to dip into it... ... of course some people use bread. Some people would even use the napkin and suck it out!! Dr W. PS - yes, we can, at least, get Toblerone here :-) |

by the way, one thing which Russia does exceptionally well is dark "bitter" chocolate.. of the kind you need to make fondue :-)
"Babaevsky" is my favourite brand, but "Krasny Oktyabr" is also nice, and there are other good ones too, like "Rot Front". Dr . |

Yes, DR W, there used to be delicious "poristy gorky shokolad" in Moscow in 70s-80s, and one could buy it by kilo, which we did Perhaps you can still get it somewhere, made by Danone disguised as "Bolshevik" which they have bought out. Dr Woland - have you tried "Baron Fon Due" in Moscow? I think they serve pineapple with chocolate fondue... but the music is too loud, - so loud in fact that even glasses of wine have been knocked off the table, allegedly... ![]() |

And did you, errr, EAT it by the kilo as well? <g> I missed Moscow in the 1970's. Actually I don't remember much about the 1970's at all, but I am fairly sure I wasn't in Moscow for them. My earliest memories of Russian chocolate were thinking that someone had forgotten to put the wick down the centre of it, but I was young and naive, the kind to whom ANY kind of chocolate could have been sold by uncrupulous agents of political subversion. Oh dear, this "Baron Fon Due" sounds a very rough sort of place... loud music, flying wine-glasses? More like "Baron, mon Dieu!" You should be careful where you go in Moscow, y'know! I presume you are the Baronesse de la Fondue? (oder die Marschallin von Gebrunntes-Schokolade?) Or is that "choc" as in "choc-electrique"? Or were you shocked by the size of the fondue? I just adore red wine with the fondue. Or, if I'm going on a 'binge' then a bottle of Stolichnaya.
As for the fondue itself; sometimes if I have nothing I just use a spoon. Eat chocolate all night. It's killer. I am going to make note of this bitter chocolate and bring my fondue dishes with me to Moscow. What a great way to spend an evening ![]() |
